The Viking - a cocktail both ginger in colour and flavour 
I’ve just been introduced to the Scottish Crabbies Alcoholic Ginger Beer which seemed like a great excuse to come up with a new cocktail. In a highball filled with ice add 30ml rum (try 5 year old Ron Varadero), 25ml Lillet Blanc (or other white vermouth), the juice of 1/2 lime, 1tbs ginger syrup (I like to make my own - just bring 1/2 cup sugar with 1/4 cup water to boil and add fresh chopped ginger and then let steep). Top with ginger beer.
