Bollywood Dreams Cocktail
This is such a yummy concoction (more a dessert in a glass than a cocktail, though it has its fair share of alcohol). Sadly, I am almost certain the deliciousness of this cocktail is down to the supremely dense and fragrant Alphonso mangoes that are available for a very limited time only each year (around March/April). Outside the season I may have to hunt around for Alphonso mango puree in a vacu-pack…..
In a blender puree together 2 cups cubed mango (preferably Alphonso), 1/4 coconut milk, 50ml dark rum, 50ml white rum, 25ml cointreau, the juice of 1 lime, 1 tbs agave syrup. Pour into two glass filled with ice. You will need a straw!
